Skinny Pizza (Calories:237)

Ok, I have to admit, I stole this idea from the Biggest Loser, which i love! I love pizza, but i like this version even better and I don't feel so guilty afterwards. Remember the brands are important for the calorie count, but feel free to mix it up as long as you note the changes. You can add topping too if you like, my boyfriend added a pepper to his. Make this recipe your own.


For One Pizza:
Ingredients:
1 whole wheat tortilla (Ozuna) (Calories: 130)
2 1/3 tablespoons Marinara sauce (Bertolli Olive oil and Garlic) (Calories: 26)
1 oz (~1/4 cup)  Shredded Mozzarella (FoodMaxx) (Calories: 81)


Preparation:
1. Preheat oven to 300
2. Spread sauce over tortilla
3. Top with cheese
4. Bake for 5 minutes


Total Calories: 237


This is great with a salad or alone as a snack! Be careful though, ever since I started eating this, I find myself craving it almost everyday!

Tofu Scramble (Calories: 369)

Oooooooh, this is so yummmy! My boyfriend's recipe and my 2nd favorite breakfast (right after breakfast potatoes). So this recipe is not as easy as some of the others because there is some seasoning involved. It is so worth it!  Double the recipe for two servings. Did I mention yum?

I always only eat half of my slice of toast... :)


For One Serving (pictured above):
Ingredients: 
1/2 package Extra firm tofu (House Foods America Corporation) (Calories: 160)
1/2 Avocado (Calories: 140)
1/2 piece of double fiber bread (Orowheat) (Calories: 35)
1/2 gram Turmeric (amount is approximate, season until tofu is very light yellow) (Calories: 1) 
1/6 tsp Salt (or to taste) (Calories: 0)
1/2 tsp Pepper (or to taste) (Calories: 3)
1/8 tsp Cayenne (or to taste) (Calories: 0)
1/4 tbsp olive oil (Bertolli Extra Virgen)  (Calories: 30)


Supplies: 
Non-stick skillet with lid
Large mixing bowl




Preparation:
1. Add oil to skillet
2. Preheat on Low-medium while preparing other ingredients
3. Cut Tofu into narrow strips and add to mixing bowl
4. Add half of the seasonings
5. Mix with fork/ Smash with fork/ scramble with fork...
6. Add the other half of the seasonings
7. Fork it up again
8. Turn heat onto high and add tofu mixture
9. Cover 
10. Cook for >10 minutes 
11. Agitate mixture
12. Cook for >10 minutes (allow water to cook off and tofu to singe slightly)
13. Toast bread
14. Slice avocado
15. Enjoy

Tips

Drink lots of water... and cut out beverages that have calories. I know this is hard for some, but it really will help you stay under your calorie limit but not feel hungry all the time.

Cut down on snacks... when you eat snacks make sure they are healthful and have lots of good nutrients. I eat fresh fruit (like apples) or small size Cliff or Luna bars (100 and 80 calories respectfully).

Eat fiber... it will help you stay fuller longer. I eat apples and double fiber wheat bread. I also add flax seed to my meals.


Yummy Taco (Calories: 282)

I encourage modifications on my recipes. If you like lettuce instead of cabbage, go for it. Prefer pinto over black beans? Make the switch! Use your own favorite brands, but make sure to look at the calories and keep track of any differences.

For one taco:
Ingredients:
Tortilla - (Mission brand) Artisan Style, Corn & Whole Wheat Blend  (Calories: 90)
1/4 cup Beans- (Rosarita brand) Low fat Refried Black Beans (Calories: 55)
1/3 cup Cheese- (FoodMaxx brand) part-skim mozzarella (Calories: 50)
1 thick tomato slice (14 grams) cut into cubes  (Calories: 3)
1 leaf green cabbage (14.5 grams) cut into strips (calories: 4)
1/2 Avocado (50 grams) (Calories: 80)


Preparation:
1. Warm beans: Put beans in a microwave safe container. Microwave for 2 minutes 30 Seconds (for a whole can)
2. Layer ingredients in order listed above
3. Enjoy

Total calories: 282



If you are still hungry after one taco, try filling in the extra 
belly space with a salad (light or no dressing) or plan to have
two. Make sure you are consuming the right amount of calories
for yourself and your goals!
